Carol Eunice Borchardt, 83, of Mankato, Minnesota died Tuesday, October 3, 2017 at Mayo Clinic Health System in Mankato.
Funeral service will be Saturday, October 7, 2017 at 11 a.m. at Epiphany Lutheran Church in Eagle Lake. Visitation will be one hour prior to the service at church.
Carol was born December 21, 1933 to Lauren and Stella (Hillstead) Burgess in Blue Earth, Minnesota. She graduated from Blue Earth High School. Carol and Elwin Borchardt were married July 31, 1955 in Fairmont. Carol spent her life tending to her family and home as a domestic engineer. Carol was a long-time resident of St. James and member of First Lutheran Church in St. James. She was a member of Epiphany Lutheran Church, Eagle Lake. She volunteered at the food shelf, Clothes Closet, and church circle. She was a member of the Red Hat Society, and the Swinging Saints Square Dance Club. Carol enjoyed her family, knitting, crocheting, baking, Facebooking, word finds, and going for walks. She will be remembered for her sense of humor, caring nature, and giving leftovers to her family to take home.
Carol is survived by her children, Rebecca (Rick) Youngmark, Vicki Ristau, Brian (Karen) Borchardt, Lisa Kiernan, and Brad (Suzie) Borchardt; grandchildren, Joshua (Naomie), Jacob (Laura) Youngmark, Kassi, Kalli, Brandon (Katie), Jerad, and Jodi Ristau, Kyle (Anna), Sarah Borchardt, Connor, Courtney Kiernan, Haley, Blaine, Dillan, and Alex Borchardt; great-grandchildren, Olivia, Macie, and Owen Youngmark, Blake, Parker, Scotty, and Debbie Ristau, and Adelaide and Elliott Borchardt; and siblings, Larry Burgess and Lillian (Burgess) Roe. She was preceded in death by her parents; siblings, Margaret, Milo, John, and Marian; husband, Elwin; grandchildren, Jeremy, Scott, and Logan; great grandchild, Noah; and son-in-law, Steve Ristau.
