Jay Pappas, age 65, left this world unexpectedly on St. Patrick's Day, March 17th, 2008.
Memorial service will be held at 10:30 a.m., Friday, March 21, 2008 at Mankato Mortuary, with Rev. Steve Kosberg officiating. Visitation will be from 4-8 p.m. on Thursday at Mankato Mortuary and continues one hour prior to the service on Friday. In lieu of flowers, memorials are preferred to the Blue Earth/Nicollet County Humane Society, Children's Cancer Research Fund (CCRF), Susan G. Komen Breast Cancer Foundation, or the Lupus Foundation.
Jay was born September 2, 1942 to James M. and Alice (Barrett) Pappas in Rochester. He touched many lives through his over 20 years in the Mankato restaurant business. He enjoyed life on many levels; he was an avid sports fan, loved dogs (he had five), loved fishing, loved bird watching, loved cooking and experimenting with new recipes. Jay was a family man.
Jay and Becky Collin enjoyed 23 years together. Between them, they have six children, eight grandchildren who he touched in many special ways. He left a legacy of gummy worm tricks and dinosaur dancing. Anyone who knows Jay experienced his wonderful sense of humor.
Jay is survived by his wife Becky; three children, Jim Pappas of Mankato, Jay (Layla) Pappas of Mankato, and Megan (Mike) Pappas-Miranda of Golden Valley; their mother, Sue Towey; three step children, Jamie (Matt) Haefner of St. Peter, Josh (Liz) Kotewa of Mankato and Adam Kotewa of New Port Beach, CA; eight grandchildren, Evan, Ellie, Isabella, Grant, Dylan, Marshall, Audrey, and Solomon; two brothers, Michael (Carolina) Pappas of Rochester and Charles (Julie) Pappas of Minneapolis; two sisters, Mary Alice Pappas of West Palm Beach, FL and Susan (Robert) Pappas Varco of Anoka; brother-in-law, Steve Ray of North Mankato; many nieces and nephews; dogs, Bambi, Chamiqua, Zelda, Teddy, and Bugsy; mother-in-law, Roxie Collin of Heron Lake; Becky's siblings, Tim (Mary) Collin of St. Paul, Dave (Barb) Collin of Healdsberg, CA, Shelly (Dave) Wolff of Monroe, CT, Billy (Jane) Collin of Worthington, Roxann Collin (RayeAnn Hoffman) of Bloomington, Bart (Dana) Collin of Worthington, Jason (Kim) Collin of Lakefield, and Nikki (Kevin) Reker of Little Canada.
He was preceded in death by his parents, James and Alice Pappas; sister, Jane Pappas-Ray; and father-in-law, David Collin.
