Marcel "Sal" Frederick was born April 17, 1926 to William and Wanda (Polaczyk) Frederick in Mankato, MN. He graduated from Mankato High School in 1944. After high school he served his country in WWII with the US Army. Sal was a part of Company 6, 34th Infantry, 24th Division. He returned to Mankato and became a chef at the Saulpaugh Hotel, where he met his wife. Sal and Rose Mary Kelly were married on October 1, 1949. They were blessed with 6 daughters. Sal was founder of Happy Chef Restaurants, a former member of the MN State Legislature for District 24B, past President of the MN Restaurant Association, Member of the Board of Directors for the National Restaurant Association, member of the Catholic Order of Foresters, Knights of Columbus, North Mankato American Legion Post #518, Rotary, Chamber of Commerce, and Katoland Connection. Sal was also a board member from the inception of MRCI. Sal didn't have your typical hobby, his hobby was to be in service to his family and community. Just a few days ago, Sal had commented, "I have thought about it, about 20 different ways, and I cannot think or imagine how I could do or give more to help someone" This is remarkable to us because even at this point in his journey, his thoughts were focused on giving to others.

Sal is survived by his five daughters and their husbands: Kathryn and Ernie Swartout of Minnetonka, Victoria and Kevin McLaughlin of Eagle Lake, Rebecca and Mitch Aspelund of Minnetonka, Mary and Dennis Potz of White Bear Lake, and Molly and Jesse Wolff of Englewood, CO; 15 grandchildren, 6 great-grandchildren; son-in-law, Doug Milbrett; siblings, Edward (Shirley), Thomas (Carol), Patricia (Jim) Matejcek, William "Bill" (Sandy), Helen Rachut; sister-in-law, Anne Frederick; many nieces and nephews.

Sal was preceded in death by his wife, Rose; his parents; his daughter, Peggy Milbrett; grandson, William Milbrett; siblings, Gerald (Lorraine), Robert, Nicholas; and brother-in-law, Don Rachut.

From Sal himself; Thank you to the many wonderful friends, employees, and customers who made our dreams come true!
