Amy Elizabeth Diaz

Amy Elizabeth Diaz, age 33 of Mankato, died Saturday, September 25, 2004 in Mankato.

Funeral services will be held at 11:00 a.m., Thursday at Ss. Peter and Paul Catholic Church in Mankato with Rev. Donald Rauscher S.J. officiating. Visitation will be held from 4"7 p.m., Wednesday at Mankato Mortuary and continues one hour before services at the church on Thursday. In lieu of flowers, memorials may be given for the benefit of Amys children, Ryan and Ashley.

Amy Elizabeth Diaz was born October 19, 1970 to James and Evangeline (Ahern) Henderson in Farmington, MN. She graduated from Austin High School in 1989 and from South Central Technical College in North Mankato. Amy was employed by Hickory Tech and worked part-time at Mickeys Sports Bar and Grill in Mankato. She enjoyed golf, softball, camping and being a Vikings fan.

She is survived by her children, Ryan and Ashley Diaz of Mankato; parents James and Eva Jo Henderson of Flandreau, SD; three sisters, Julie Henderson of Landcaster, CA, Kathy (Jimmy) Kinsey of St. Marys, GA, Susan Shirley of Homer, GA; two brothers, David (Kim) Henderson, John (Angie) Henderson all of Flandreau, SD; father of her children, Leon Diaz of Mankato; nieces, nephews, cousins, aunts and uncles.
