Eldred "Dolly" Elaine Herbst, age 79, of Lake Crystal, died Saturday, January 15, 2011 at Immanuel St. Joseph's Hospital in Mankato.

Funeral service will be 11:00 a.m., Wednesday, January 19, 2011 at St. Paul's Ev. Lutheran Church in North Mankato, with Rev. Gary Wong officiating. Interment will be in Woodland Hills Memorial Park. Visitation will be one hour prior to the service at the church on Wednesday. Mankato Mortuary handled the arrangements. Memorials are preferred to the St. Paul's Ev. Church Music Department.

Dolly was born on November 7, 1931 in Willow Creek, MN. She was the daughter of Edwin and Alice (Kiecker) Rossow. Dolly was confirmed at St. Paul's Ev. Lutheran Church. She was a 1949 graduate of Mankato High School. Dolly was united in marriage to Clarence "Red" Herbst on September 2, 1951 in North Mankato. She was employed with Lundberg Furs in Mankato for many years. Dolly was an active member of St. Paul's Ev. Lutheran Church where she participated in the choir, the Lake Crystal American Legion Auxiliary, the Lake Crystal Garden Club, and the OWLS (Organization of WELS Lutheran Seniors). She enjoyed gardening, reading, sewing, and fishing at their cabin near Cross Lake.

Dolly is survived by her husband, Red of Lake Crystal; daughter, Cathy Mikolai of Wells; son, Mike (Cheri) Herbst of Lake Crystal; two granddaughters, Kirsten and Kaitlin Herbst; brother, Tim (Etta) Rossow of Lake Crystal; sister-in-law, Marion Williams of Mankato; also many nieces and nephews.

She was preceded in death by her parents and an infant daughter.
