Catharina "Toos" H. Roelofs

Catharina “Toos” H. Roelofs, age 90, of Vernon Center, died Wednesday, July 10, 2019 at Pathstone Living in Mankato.

Mass of Christian Burial will be 11:00 a.m., Saturday, July 13, 2019 at St. Matthews Catholic Church, Vernon Center. Burial will be in St. Matthews Catholic Cemetery. Visitation will be held two hours before service at the church on Saturday. Mankato Mortuary is in charge of arrangements. In lieu of flowers, memorials may be given to VINE, Mayo Hospice, or St. Matthews Cemetery.

Catharina was born August 21, 1928 to Herman Johannes and Johanna Everdina (Zweers) Nibbeling in Didam, Holland. Cathy “Toos” met Harry J. Roelofs during the U.S. liberation of Holland during World War II. They married on May 6, 1953 in Didam, Holland. After World War II they moved to America and settled on a farm in rural Vernon Center, where they farmed for 35 years, before retiring to Vernon Center in 1988. They spent 14 winters in Weslaco, Texas, and they were proud “Winter Texans”. Cathy was a proud Dutchman, she loved to cook, clean, and was a voracious reader. She enjoyed spending time with her grandchildren.

Cathy “Toos” is survived by her children; three sons, Henry (Jan) Roelofs Mankato, Charles (Diane) Roelofs of St. James, and Stephen (Jodi) Roelofs of Vernon Center; daughter, Mary Jo (Steve) Trio of Mapleton; seventeen grandchildren; thirteen great-grandchildren; brother, Bart (Diny) Nibbling of Beek, Holland; many nieces and nephews in Holland, Canada, and the United States.

Cathy “Toos” was preceded in death by her parents; husband, Harry in 2010; four siblings, Riek (Theo) Reintjes, Jan (Gitta) Nibbeling, and Annie (Berend) Hendriksen, and an infant sister.
