Meredith Kay Nibbe was born April 26, 1948 in Red Wing, MN to Kathleen M. (Jenkins) and Kenneth E. Nibbe. She was baptized and confirmed at St. Paul’s Lutheran Church, Red Wing. She was a 1966 Graduate of Red Wing High School, a 1969 Graduate of Abbott Hospital School of Nursing and also attended the University of Minnesota. On September 19, 1970 Meredith was united in marriage to Phillip Steven Fitch. The couple settled in Mankato, eventually moving to Lake Washington (St. Peter) where they have resided since 1982. Their marriage was blessed with two daughters, Heather and Heidi. For many years, Meredith worked as an R.N. in several capacities. She enjoyed family gatherings, traveling, boating, working out, singing, playing piano, walking and word puzzles. She was an active member of Grace Lutheran Church in Mankato where she was employed for 20 years as a Ministries Coordinator and Parish Nurse. She and Phil led the worship team at Grace for many years. Through the years Meredith was active in church choirs and several bible studies. Her faith in her Lord and Savior Jesus Christ was a highlight of her life. Meredith enjoyed attending her daughters' choir concerts, plays, tennis matches, softball games, gymnastics and track meets and later her granddaughters' church and school programs and volleyball games. Meredith passed peacefully into her eternal home with her Lord Jesus on September 7, 2022.
She is survived by her husband, Phil of 52 years; daughters, Heather Fitch (David Radcliff) of St. Paul, MN and Heidi (Andy) Drummer of Janesville, MN; granddaughters, Elsie Sieberg of Naples, FL and Lyla (Ethan) Ronchak of Bloomington, MN; brother, Craig (Jane) Nibbe of Wayzata, MN; nephew, C.J. (Julie) Nibbe, Knox, Nash and Rosie of Shorewood, MN; niece, Caroline (Justin) McCoy, Maddie, Landon, and Brooklyn of Independence, MN; as well as many cousins. Her parents preceded her in death.
A Celebration of Life service for Meredith will be held at New Creation World Outreach Church in North Mankato on Saturday, October 1, 2022 at 11:00 am with visitation immediately preceding from 9-11 a.m. The service will be livestreamed and available on Meredith’s obituary page at www.mankatomortuary.com.
In lieu of flowers, memorials preferred to New Creation World Outreach Church (North Mankato), Grace Lutheran Church (Mankato), Door of Hope Ministries (Blaine or Mankato), or MN Adult and Teen Challenge.
